Tora kitty has been to the vet. Now I'm really broke.

 Tora got a bad wound from a bite on her face. I think it was another cat that bit her while she was outside. The vet bill is killing me financially. Lt was almost $340 for the initial treatment, and now they want almost $640 to do surgery. I brought her home without the surgery, but with antibiotic crem and the "cone of shame".

I'm putting together a cookbook

 I'm putting together a cookbook as a companion to my cooking channel on YouTube. Here's one of the recipes that will be included in the book:


BANANA BREAD

Note: I do not let the bananas get super ripe. As soon as they have two or three brown spots, I think they are ready to use.


Tessa’s version:

Ingredients: 

2/3 cup granulated Sugar 

1/3 cup Brown Sugar, packed 

1/2 cup Butter, softened 

2 large Eggs 

1 1/2 cup mashed Bananas (about 3 large bananas) 

1/3 cup Whole Milk 

1 tbsp Lemon Juice 

1 tsp vanilla

1 tsp. ground Cinnamon  

1/2 teaspoon ground ginger 

1/2 tsp. ground Nutmeg 

1 tsp. Baking Soda 

1 1/4 cup All-Purpose Flour

half teaspoon salt 

INSTRUCTIONS: 


Preheat the oven to 375F

Either by hand using a fork, or with an electric mixer on low speed, mash the bananas in a large mixing bowl. Add the sugar, lemon juice and vanilla, and mix again. Add the milk and eggs and mix thoroughly. Mix the dry ingredients together and then slowly mix them into the banana mixture a couple spoonsful at a time. 

Butter or oil a loaf pan. Spoon in the batter. Bake at 375F for about 50 minutes. Start testing after 40 minutes by poking a wooden skewer into the bread. If the skewer  comes out clean, it is fully cooked.

I turn off the oven, prop the oven door slightly open, and let the banana bread cool for half an hour before I take it out of the oven. You can take it out right away if you want to. 

Let the bread cool for at least half an hour before serving it, and serve with butter or frosting, or plain.
